White Cedar Inn 178 Main St Freeport, Maine 04032 1-800-853-1269 www.whitecedarinn.com Apple Ginger Upside-Down French Toast Serves 6 1 stick butter 2 tbsps water 1 c packed brown sugar 2 c sliced, peeled apples (3 Fuji apples work best) 6 slices Pepperidge Farm Cinnamon bread (thick sliced) 1/4 c finely chopped candied ginger 5 large eggs 1 1/2 c milk 2 tsps vanilla extract Preheat oven to 350 °. Grease a 9x13 baking pan. Melt butter in small saucepan over low heat. Add brown sugar and water; stir until smooth. Pour butter mixture into baking pan. Arrange apple slices on top, sprinkle candied ginger over apples. Layer bread slices on top. Beat together remaining ingredients, pour evenly over bread. Bake for 45-55 minutes. Cut apart, drizzle pan drippings over plated toast. Tastes best if assembled and refrigerated the night before to let eggs soak into bread.
